This Pizza is all about the crust and lots of filling!
Ingredients
| 2 C / 500mL | Shredded Mozzarella |
| ¾ lb / 340 g | cooked Italian sausage, sliced |
| 1 | Can artichokes drained and sliced (398mL) |
| 1 | Can sliced mushrooms drained (284mL) |
| 1C / 250mL | Sliced red peppers |
| 1½ C / 360mL | Pizza Sauce |
| ⅓ C / 80mL | Grated Parmesan |
| ½ C / 125mLl | Olives sliced and drained |
Divide pizza dough into 2 balls 55/45 split. The smaller portion of dough can be frozen and will make a 10” regular pizza crust (or see variation) Take larger portion and roll out 4” larger than Multichef® Deep Dish Baker. Place dough in baker leaving 1” hanging over the sides. Trim if required and add trimmings to the small dough ball. Sprinkle 1 cup shredded mozzarella to cover the bottom crust. Mix sausage, mushrooms, olives, parmesan and 1 cup pizza sauce. Pour on top of mozzarella and spread evenly.
Place artichokes and peppers evenly on top, spread with remaining sauce and cover with remaining mozzarella. Fold up the over hanging dough and pinch against the top of the baker for a nice thick edge.
Place in pre-heated 450ºF/230ºC oven bake for 20 minutes. Remove from oven and cover with foil and continue to bake for another 10 minutes. Remove from oven and let cool 10 -15 minutes before slicing.
Alternative Version: Stuffed Deep Dish
Additional Ingredients
| 1 | Portion of dough leftover from above |
| ½ C / 125mL | Shredded mozzarella |
| 1 C / 240mL | Pizza sauce |
Take the small dough and roll out to 1 -2“ larger than baker. Place on top of ingredients prepared as above. Take over hanging dough and pinch against top of baker and bottom crust. Take knife and make several small slits in top of crust. Spread pizza sauce over top of crust and sprinkle with mozzarella.
Place in pre-heated 450ºF/230ºC oven for 20 minutes. Remove from oven and place foil on top to cover, bake for additional 10-15 minutes. Remove from oven and cool for 15-20 minutes before slicing.
As pizza will be heavy use oven mitts to remove from oven and place on a trivet.
